Cooking: Plan a menu, appitizers, entree, and desert and make it all from scrach.  The cooking is the fun evening not the eating so don't fret about long prep times.

Dance Classes: The women gets to dance, the man gets an instructor and no one has to deal with the assholes at the clubs.

Improv Classes: Most improv troupes host classes to subsidise there troupe.  Some troupes even use these classes as a means of recruiting new talent.

Board Games: Skip Monopoly and Risk, theses games are too involved and can breed conflict.  Try trivia or card games, you know, the kind of things you can do while drinking and talking.

Throw a (Dinner) Party: I know, I always looked forward to other people throwing the party because then they got to handle the planning, prep, management, and cleanup.  But wait, planning, prep, management, and cleanup are all things you can do as a couple.  Take your time and do it right, contact guests in advance (maybe even months) and ask if they could help cover some of the costs of an otherwise free and awesome party and they will be more likely to show up.  Plus, it helps keep you from breaking the bank.

Live Shows: If you live near a city you can likely find a show of some kind (ballet, play, comedian, concert, etc) every weekend.  Even if nothing looks good the reality is that if the price is right, something is better than nothing so get out there are experience something to talk about.

Family Dinner Night: I know you've heard of this one, but think bigger.  Involve family, extended family, friends, whoever really and follow this equation:  Party A pays for the food, Party B supplys the kitchen and cleanup, Party C Cooks the meal, All other parties are off the hook for now but everyone should be rotated in at some point.
